Ingredients:
• 4 Smoked chicken breasts
• 300 ml boiling water
• Salt and pepper
• 15 ml (1 tablespoon) olive oil
• 300 ml couscous
• 25 g butter
• 250 ml (1 cup) ripe cherry tomatoes
• 50 g dried apricots, finely chopped
• A handful of fresh herbs such as parsley and mint
• Extra olive oil
Method:
- Dice the chicken breasts and transfer to a large salad bowl.
- Cook the couscous: bring the water, 5 ml (1 teaspoon) salt and 15 ml (1 tablespoon) oil to the boil. Add the couscous and steam for about 5 minutes. Remove the lid and add the butter.
- Fluff the couscous and mix with the diced chicken.
- Chop the tomatoes and apricots and add to the couscous mixture.
- Add the fresh herbs, season with salt and pepper and moisten with the extra oil.
Tip: Couscous can be replaced with cooked quartered potatoes or pasta.
